Karnıyarık Recipe

Karnıyarık is one of the most authentic dishes of Turkish Cuisine. It is quite tasty and satisfying. With this recipe, a 6-person karnıyarık can be prepared in about 70 minutes.

• 6 small eggplants,

• 3 green chili peppers,

For the minced meat mix;

• 300 grams minced meat,

• 1 large onion or 2 medium onions,

• 2 green chili peppers,

• 2 cloves garlic,

• 1 medium tomato,

• 6 stalks parsley,

• 1/8 cup sunflower oil,

• Half a teaspoon black pepper,

•1 teaspoon salt,

• 1 teaspoon paprika,

• 1 tablespoon tomato paste,

For the sauce;

• 1 tablespoon tomato paste,

• 1/2 cup hot water (200 ml),

• 1 teaspoon salt,

• 2 tablespoons sunflower oil.

Step 1: First of all, wash the eggplants, cut the eggplant stalks, fry the eggplants as a whole in plenty of oil in a way that they are half cooked on all sides,

Preparation of minced meat mix;

Step 2: Put 1/8 cup sunflower oil in a large pot and heat it,

Step 3: Add 300 grams minced meat and cook it lightly,

Step 4: Finely chop 2 green chili peppers and add to the minced meat, cook for 10 minutes,

Step 5: Chop 1 large onion into small cubes and add to the pot,

Step 6: Finely chop 2 cloves garlic and add to the pot,

Step 7: Cook for 15 minutes, stirring occasionally,

Step 8: Add 1 tablespoon tomato paste to the pot and cook for 5 minutes,

Step 9: Chop 1 tomato into cubes and put it in the pot,

Step 10: Close the lid of the pot and cook for 5 minutes,

Step 11: Add salt, black pepper, and paprika,

Step 12: Add finely chopped parsley and turn off the stove,

Step 13: Put the fried eggplants on the baking tray and cut the eggplants lengthwise with a knife,

Step 14: Fill the eggplants, the middle of which is opened with a knife, with minced meat mix,

Step 15: Clean the seeds of 3 green chili peppers, cut them into a finger length, and put them on the minced meat mix,

Preparation of sauce;

Step 16: Mix 1 tablespoon tomato paste and 1/2 hot water and stir until the tomato paste dissolves,

Step 17: Add 2 tablespoons of sunflower oil and 1 teaspoon of salt into the sauce and mix,

Step 18: Pour the prepared sauce all over the baking tray with a spoon,

Step 19: Place the tray in the oven at 180 degrees and bake for 30 minutes.
