Semolina Halva (Semolina Dessert) Recipe

Semolina Halva is a wonderful Turkish dessert from Ottoman cuisine. You can consume it hot or cold according to your taste. It can be made with or without milk. This recipe includes milk.

The consistency and color of the semolina dessert change according to taste, so you can adjust the time and the fire of the stove while cooking, whichever consistency and color you want. You can also use walnuts and hazelnuts instead of pine nuts if you wish. Semolina halva makes a great pairing with ice cream.

With this recipe, semolina halva for 4 people can be prepared in about 30 minutes.

  • 100 g butter,
  • 1.5 cups  semolina (a cup is 200 ml),
  • 2 cups milk,
  • 1 cup water,
  • 1 cup granulated sugar,
  • 70-80 g pine nuts.

Step 1: Put a wide-bottomed pot on the stove on low heat,

Step 2: Add the butter to the pot, when the butter melts, put the pine nuts and fry the peanuts for 7-8 minutes, stirring constantly,

Step 3: Add 1.5 cups semolina, stir fry for 15-20 minutes on low heat,

Step 4: Put the milk, water and sugar in another pot, bring it to a boil by mixing it all,

Step 5: Add the boiled mixture to the hot  semolina and stir,

Step 6: Turn off the stove before the semolina absorbs all of the liquid mixtures,

Step 7: Cover the pot and let it rest for 6-7 minutes,

Step 8: Then open the lid and stir the halva. It is now ready to be served.
