Yayla Soup (Yogurt Soup) Recipe

Yayla soup prepared with the recipe given below can be served to 6 people and can be prepared in as little as 30 minutes.

• 1 1/4 cup rice

• 6 1/2 cup water

• 1.5 1/2 cups Greek yogurt

• 1.5 tablespoons flour

• 1 egg

• 2 tablespoons butter

• 1 tablespoon mint

• 1.5 teaspoons salt

Step 1: Put 6 glasses of water and rice in the pot. Boil for about 10 minutes until the rice is soft.

Step 2: In a bowl, whisk the yogurt, egg and flour until smooth.

Step 3: Add the boiling rice-water little by little to the bowl and mix.

Step 4: Add the mixture to the pot and keep stirring until it boils over medium heat.

Step 5: Heat 2 tablespoons of butter in a saucepan over medium heat. Add 1 tablespoon of mint to the heated butter and heat for 20 seconds.

Step 6: Finally, add the mint heated in oil to the boiling soup and mix.

Step 7: Boil for about 2 minutes over medium heat. Stir constantly until the soup boils.

Step 8: Add the salt after removing the soup from the heat.
