Ezogelin Soup is one of Turkey’s best known and most admired soups. Besides being very tasty and nutritious, it is a very practical and easy-to-make soup. Ezogelin means “Ezo the bride” in Turkish. You can prepare the ezogelin soup for 6 people in approximately 45 minutes.

Ingredients
• 2 1/2 cups red lentils,
• 3 tablespoons rice,
• 2 tablespoons bulgur, (see what is bulgur?)
• 1 medium size onion,
• 1 tablespoon tomato paste,
• 1 tablespoon butter,
• 9 cups hot water (a cup is 200 ml),
• 1 teaspoon mint,
• 1 teaspoon salt
Directions
Step 1: Boil 9 cups water in the kettle and put it in a pot. Add 2 1/2 red lentils, which you have washed and drained, to the pot.
Step 2: Add 3 tablespoons rice, 2 tablespoons bulgur and 1 teaspoon salt to the pot.
Step 3: Cook for about 35 minutes, until the red lentils are tender.
Step 4: Melt 1 tablespoon butter in a pan.
Step 5: Add 1 diced onion and fry it.
Step 6: Add 1 tablespoon tomato paste to the fried onions.
Step 7: Add 1 teaspoon mint and fry for 2 more minutes.
Step 8: Take your sauce off the stove.
Step 9: Add the fried onion mixture to the pot.
Step 10: Then cook the soup you stirred quickly for another 10 minutes.
Key point: If you do not want to drink a granular soup, you can serve the soup after passing it through the blender.
