“Türlü” (Turlu) means “contains all kinds” in Turkish. Türlü is one of the most popular dishes of Turkish cuisine. Different recipes can include different vegetables or can be made without meat. It can be cooked in a stew or a pot. It tastes better if cooked in a stew.
With this recipe, Türlü can be prepared for 4 people in about 2 hours.
Ingredients
- 500 grams cubed meat,
- 3 cups warm water,
- 3 eggplants (medium),
- 3 tomatoes (medium),
- 2 green chili peppers,
- 2 capia peppers,
- 2 potatoes (medium),
- 2 onions (medium),
- 3 cloves garlic,
- 1 tablespoon tomato paste,
- 1 teaspoon chili paste,
- 1.5 tablespoons butter,
- 5 tablespoons sunflower oil,
- 1 teaspoon salt,
- 1 teaspoon black pepper.
Directions
Step 1: Cut the eggplants into 2 cm cubes,
Step 2: Peel and cut the potatoes into 2 cm cubes,
Step 3: Peel and cut the tomatoes into 2 cm cubes,
Step 4: Peel and dice the onions,
Step 5: Finely chop the green peppers and capia peppers after removing the seeds,
Step 6: Add 1.5 tablespoons butter and 5 tablespoons sunflower oil in a saucepan heated on medium heat and heat them,
Step 7: Add 500 grams cubed meat and cook,
Step 8: When the meat releases its water, close the lid of the pot,
Step 9: Cook the meat until the water is absorbed and stir from time to time,
Step 10: Add the peppers and cook for 10 minutes,
Step 11: Add onion and garlic and stir,
Step 12: Close the lid of the pot and continue cooking the meat for 15 minutes (reduce the stove at this stage),
Step 13: Open the lid from time to time and stir,
Step 14: Add the tomato paste and pepper paste and cook, stirring, for 7-8 minutes,
Step 15: Add the potatoes and cook for 5 minutes,
Step 16: Add the eggplants and cook for 5 minutes, stirring,
Step 17: Add the tomatoes, stir and cover the pot, and cook for 10 minutes until the tomatoes release their juice,
Step 18: Add salt and pepper,
Step 19: Add 3 cups of warm water and stir,
Step 20: Cover the pot and cook on low heat for 25-30 minutes.
