Classic Rice Pilaf Recipe

Rice pilaf is one of the most popular dishes in Turkish cuisine. Along with rice pilaf, baked beans or türlü (turlu, Turkish vegetable stew) are also included in the menu. Rice pilaf makes a great pairing with baked beans and is loved by the Turks. It is a great couple with doner kebab in restaurants.

There are many varieties of rice. What we are talking about in this recipe is the classic white rice pilaf. With this recipe, you can prepare a pilaf for 4 people in 30 minutes.

• 2 cups white rice ( 1 cup: 200 ml),

• 2 spoonful butter,

• 2 tablespoons sunflower oil,

• 1 teaspoon salt,

• 3 cups boiling water,

Step 1: Put 2 cups rice in a bowl,

Step 2: Add enough water to cover the rice by 1 cm and leave it in water for 15 minutes,

Step 3: After 15 minutes, drain the water and wash the rice thoroughly with cold water and let it drain,

Step 4: Put the pot on the stove on medium heat,

Step 5: Put 2 tablespoons sunflower oil in the pot,

Step 6: When the oil is hot, add the rice and fry the rice for 2 minutes,

Step 7: Add 2 tablespoons butter, continue to fry the rice for another 4-5 minutes, stir it slowly,

Step 8: Add 1 teaspoon salt,

Step 9: Add 3 cups boiling water and close the lid of the pot,

Step 10: Bring the stove flame to the lowest level,

Step 11: After 15 minutes, open the lid of the pot and check whether the water is completely drawn from the edge of the pot,

Step 12: If the water is completely drained, turn off the pot, turn off the stove and let the rice rest for 10 minutes,

Step 13: Stir and serve.

Key point:

  • If using the pot granite or covered with teflon, it will prevent the rice from sticking to the pot,
  • The pot should not be deep, it should be wide,
  • While cooking rice, the lid should not be opened,
  • If broth or chicken broth is used instead of water, the rice will be more delicious.
